I'm Marie.  I live in the beautiful Northern Irish countryside.  I've been a chef for over 30 years and have always had a passion for cooking, however, over the years this has expanded to home baking and cake making.  I believe in using locally sourced ingredients and organic flour from small mills.  They can be more expensive but most definitely worth it.  I hope you enjoy the recipes and a little insight into Irish cooking.

Half-Term Fun

Are the little darlings bored already? Well, one thing I have learned over the years as a mother of 3 grown up children, is that they all love to bake. Even better they love to show their artistic prowess by decorating!

I am going to show you how to make cupcakes into flowers using mini marshmallows.

Aren't they lovely! I want to make this as simple and stress free as possible for you.

You can buy a packet of plain, ready-made muffins or fairy cakes. If you would really like to make the buns yourself I will leave a recipe at the end of this blog.

You will also need a tub of buttercream icing, gain this can be bought ready-made in the supermarket, 1 bag of mini marshmallows (doesn't matter what colour), some coloured dragees or sprinkles and a little pot of edible glitter. All of this can be bought at the supermarket.

Take a plain cupcake and spread a good layer of buttercream evenly over the top until it is completely covered. Using small scissors cut each mini mallow diagonally. This makes them petal shaped. (cutting them horizontally or vertically just keeps them round or oblong).

Starting from the outside edge, push the wide part of the marshmallow into the buttercream. Continue until the whole outside edge is filled. Then do the came again with another ring of marshmallows. Do this 3 times. You will be left with a small circle in the middle. Fill this with the dragees or sprinkles. Finally, sprinkle a pinch or two of edible glitter in the middle.

Easy, pretty and yummy!!

Fairy Cakes Recipe

100g soft margarine/butter

100g castor sugar

2 large eggs

100g self-raising flour

1 tsp milk (optional)

Preheat oven to 180°C (355°F, gas mark 4).

Put all the ingredients into the mixer and beat for a few minutes until well mixed

Divide equally between 12 bun cases and bake 15-20 mins until well risen and just firm to touch.

Cool and ice.

Buttercream Icing

100g sifted icing sugar

100g softened butter

1 tbs milk

1-2 tsp vanilla essence

Put all ingredients into a mixing bowl. Start off on a low speed to incorporate the ingredients. Gradually increase the speed and beat until light and fluffy. If the mixture is too stiff, add another spoonful of milk
